A friend shared with me this recipe which was a total time saver. The only thing I would add to it was a little more tomatoes (since I am a huge fan). Before cooking the rice, dice up the bacons and fry them (to get rid of the grease, or least attempt to). Add a can of corn kernels (removing the water) and cook everything all at once. I intended to make more to save up for lunch on Monday, but with Yunny & Ah Lo eating 3 bowls and Dai Bee, 2 large bowls, Mr. Piggy and I were lucky to even save a bowl for ourselves.
