Still trying to get use to this Daylight savings time (with one less hour of sleep). While having to run around the bulk of the day, dinner wasn’t my priority. Because coming up with this meal was so last minute, I wanted to make something simple – Vietnamese Chicken Soup (or Phở Gà). Don’t get me wrong, making Phở Gà does require some patient cooking, especially making the broth. Since I didn’t have enough time, I cheated and used the chicken stock cube for the pot of soup. The rest, I will take credit for. I also used the fresh, flat noodles which I think taste better with the chicken soup. This simple bowl of noodle would just calms all the nerves down. What a treat to end the day, the weekend.
