Today, I am making chicken spring rolls for lunch for the kids. So this is what my kitchen counter looks like at 6:30 am in the morning, a bit chaotic.

These will be individually wrapped in saran wrap to keep the rice paper soft and pliable (because they won’t eat it until a few hours later). I’ve added the hoisin sauce in the rolls so that I don’t need to get them extra sauce pan. I made more than 8 since the girl had 5 to herself already. Lucky kids they are.

We had Bun Rieu for dinner last night, so I made extra noodles for today’s lunch.
