I don’t know how I used to make Bentos in the past for the boys. Simple one like this takes a long time! (⊙_⊙). Nevertheless it’s a joy to make!

I followed Youtuber – Yeung Man Cooking – and his recipe for Garlic Chili Noodles. They are easy to make and turns out beautifully delicious!

My sister gave us some endives. I had these long time ago and didn’t really like the bitter taste. I’m willing to give a try again (can’t turn away from free food!) Thanks to YouTube for recipes, I found an easy and delicious one by Gordon Ramsey – cook with orange juice! I didn’t add the wine like he proposed but used fresh orange juice. The bitterness is still there, but the citrus helps balance the vegetable. I paired it with cod and it was delicious. What a healthy and simple meal.

Trying my best to make some homemade food for Dai Bee while he’s back. He missed home meals so much he ate 3 bowls!

Lunch for the three of us. Dai Bee is jet lagged and I’m working, so it’ll be a quick one. Good thing I always have these frozen wontons in stock for quick meals like these! Again, welcome back, Dai Bee. Great to have another body here to do chores around the house. ♡ \ ( ̄ ▽  ̄) / ♡

Today I made some spinach fried rice for my mom. With the leftovers, I decided to fix Ah Lo’s lunch. Since he bikes to school and stuff his lunch box in his school bag, I doubt he will see what I see when he opens his lunch. Oh well, here’s what he should see…

This has been a crazy busy month. Can’t believe it’s almost over and I haven’t done anything fun to celebrate this month! So let’s start by getting this butternut squash risotto. I didn’t have to do much since the natural flavor of the squash was so sweet already. I decided to add some nori to make this a fun meal.

It’s been awhile since I baked bread at home. Our oven is still not working so I used the baking feature from my air fryer to bake. It came out ok, but not the same. Can’t wait to have a working oven again.

No school for Ah Lo, so I decided to make him a “hot lunch.” One of his favorite meal is the stir fry udon served in a sizzling platter. I added lamb slices which I thought totally enhanced the flavor. Ah Lo had the entire plate while Mr. Piggy and I share one. Everything served in a sizzling platter tastes great!

I don’t know what went through my head for cooking such a big meal (for lunch!) (⌒_⌒;)

Now that it’s just the 3 of us, I need to relearn the portions all over again. Well, on the good note, no need to fix lunch tomorrow!
